Sweet and Spicy Shrimp Lettuce Cups

Ingredients
  

  • 3 lettuce cups
  • farro
  • shrimp
  • 1 mango
  • ¼ small red onion, diced
  • 1 roma tomato, diced
  • 1-2 tbsp cilantro, fresh, chopped
  • 1 lime
  • ¼-½ tsp cayenne pepper
  • salt to taste

Method
 

  1. Cook 1 serving of farro as instructed and set aside.
  2. Cut up mango, tomato, red onion and cilantro around the same size. Add to a bowl with juice from 1 lime. Add salt to taste and combine. Set aside.
  3. Cook shrimp in pan as instructed. Add cayenne pepper and salt to each side while cooking.
  4. Assemble lettuce cups by adding farro first, then shrimp, and top with mango salsa and cilantro for garnish. Enjoy!
