In a large pot on medium heat, add diced onion and olive oil. Let cook until onions become translucent.
Once translucent, add in minced garlic, chili powder, cumin, cayenne pepper, salt and pepper. Mix until combined. Let cook until spiced become fragrant. ~ 2 minutes.
Add ground turkey and chop into small chunks. Let cook fully.
Slowly add in vegetable stock. With a wooden spoon, scrape all the bits off the bottom of the pot.
Add in all beans, corn, tomatoes, bell pepper and salsa. Stir everything together and cover to let simmer for 25-30 minutes, stirring occasionally.
Once done, remove from heat and remove lid. Let sit for 5 minutes.
Serve with lime juice, fresh cilantro, cheese and enjoy!
