High Protein Pumpkin Spice Pancakes

Ingredients
  

  • ½ cup cottage cheese
  • ¼ cup almond milk
  • 2 eggs
  • ½ cup pumpkin puree
  • 1 tbsp maple syrup
  • 1 tsp vanilla
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • pinch of salt
  • 1 tbsp pumpkin pie spice
  • 1 tbsp butter or ghee

Method
 

  1. Blend cottage cheese and milk together until smooth.
  2. In a bowl, add pumpkin puree, eggs, vanilla and maple syrup. Add cottage cheese mixture and combine well.
  3. Add flour, baking powder, baking soda, salt and pumpkin pie spice. Mix until smooth.
  4. Heat up a pan and add butter or ghee and let melt. Use a 1/4 measuring cup to portion out pancake batter and let cook. Once the pancakes start to bubble on the raw side, flip and cook other side fully.
  5. Once done cooking, add pancakes to a plate, top with butter and maple syrup and enjoy!
