Blend cottage cheese and milk together until smooth.
In a bowl, add pumpkin puree, eggs, vanilla and maple syrup. Add cottage cheese mixture and combine well.
Add flour, baking powder, baking soda, salt and pumpkin pie spice. Mix until smooth.
Heat up a pan and add butter or ghee and let melt. Use a 1/4 measuring cup to portion out pancake batter and let cook. Once the pancakes start to bubble on the raw side, flip and cook other side fully.
Once done cooking, add pancakes to a plate, top with butter and maple syrup and enjoy!
