Dressing
- Soak cashews in warm *not hot* water for 5 minutes. Drain and rinse.
- Add all dressing ingredients together and blend on high speed for about 30 seconds to 1 minute. Add more water if you want to thin it out, 1 tsp at a time. Set aside.
Wrap
- Drained and rinse chickpeas and toss in a small bowl with 1 tbsp olive oil, cayenne pepper, oregano and garlic powder. Mix until fully coated.
- Place in air fryer and cook for 20 minutes at 360°, tossing halfway through. Chickpeas should get hard and crispy.
- While the chickpeas are cooking, add olive oil to a pan and cook chicken. Season with salt, pepper and cayenne pepper. Cook through fully.
- Heat up tortillas and add to a plate.
- Add Caesar dressing to your tortilla. Place cut chicken on top, followed by lettuce, chickpeas, sunflower seeds and parmesan cheese.
- Roll up wrap, cut in half and enjoy!
