Half and place figs in a pot with sugar, vanilla, and water.
Bring to a boil and cook over medium heat until sugar is dissolved.
Break up the figs with the back of a spoon and continue to cook for 5-8 minutes. Reduce heat and maintain a gentle boil.
Remove from heat and let cool for 10 minutes.
Strain through a mesh sieve. Gently press the mixture through using the back of a spoon.
Add fig syrup, ~ ½ tsp- 1 tbsp to a coffee cup, and pour ice, espresso, and milk of choice on top. Stir and enjoy!
*Store syrup in a jar in the fridge and enjoy for up to two weeks.
