High Protein Pumpkin Spice Pancakes

Ingredients
- ½ cup cottage cheese
- ¼ cup almond milk
- 2 eggs
- ½ cup pumpkin puree
- 1 tbsp maple syrup
- 1 tsp vanilla
- 1 cup whole wheat flour
- 1 tsp baking powder
- ¼ tsp baking soda
- pinch of salt
- 1 tbsp pumpkin pie spice
- 1 tbsp butter or ghee
Instructions
- Blend cottage cheese and milk together until smooth.
- In a bowl, add pumpkin puree, eggs, vanilla and maple syrup. Add cottage cheese mixture and combine well.
- Add flour, baking powder, baking soda, salt and pumpkin pie spice. Mix until smooth.
- Heat up a pan and add butter or ghee and let melt. Use a 1/4 measuring cup to portion out pancake batter and let cook. Once the pancakes start to bubble on the raw side, flip and cook other side fully.
- Once done cooking, add pancakes to a plate, top with butter and maple syrup and enjoy!
