High Protein Pumpkin Spice Pancakes

Ingredients

  • ½ cup cottage cheese
  • ¼ cup almond milk
  • 2 eggs
  • ½ cup pumpkin puree
  • 1 tbsp maple syrup
  • 1 tsp vanilla
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • pinch of salt
  • 1 tbsp pumpkin pie spice
  • 1 tbsp butter or ghee

Instructions

  • Blend cottage cheese and milk together until smooth.
  • In a bowl, add pumpkin puree, eggs, vanilla and maple syrup. Add cottage cheese mixture and combine well.
  • Add flour, baking powder, baking soda, salt and pumpkin pie spice. Mix until smooth.
  • Heat up a pan and add butter or ghee and let melt. Use a 1/4 measuring cup to portion out pancake batter and let cook. Once the pancakes start to bubble on the raw side, flip and cook other side fully.
  • Once done cooking, add pancakes to a plate, top with butter and maple syrup and enjoy!
