Sweet and Spicy Shrimp Lettuce Cups
Ingredients
- 3 lettuce cups
- farro
- shrimp
- 1 mango
- ¼ small red onion, diced
- 1 roma tomato, diced
- 1-2 tbsp cilantro, fresh, chopped
- 1 lime
- ¼-½ tsp cayenne pepper
- salt to taste
Instructions
- Cook 1 serving of farro as instructed and set aside.
- Cut up mango, tomato, red onion and cilantro around the same size. Add to a bowl with juice from 1 lime. Add salt to taste and combine. Set aside.
- Cook shrimp in pan as instructed. Add cayenne pepper and salt to each side while cooking.
- Assemble lettuce cups by adding farro first, then shrimp, and top with mango salsa and cilantro for garnish. Enjoy!
