
I don’t know about you, but I always love to have something sweet after dinner. Recently I’ve been loving chocolate-covered almonds but have not been loving the ingredients! The most recent container I got from a beloved grocery store that shall remain nameless contained soybean oil, natural flavors, confectioner’s shellac, and a few other questionable ingredients. I thought to myself how easy it would be to make homemade chocolate-covered almonds with better ingredients, so that’s exactly what I did!

These chocolate-covered almonds only contain 4 simple ingredients:
-Dry-roasted organic almonds
-Dark chocolate (I prefer 72% and above)
-Coconut oil (to melt the chocolate down)
-Flaky sea salt (optional)
All you have to do is add 1/2 cup of chocolate chips with a tbsp of coconut oil and microwave for 40 seconds or until the chocolate has melted. Then add the almonds to the mixture. Scoop out one at a time with a fork and let the excess chocolate drain off. Add to a baking sheet lined with parchment paper. Sprinkle with sea salt and place in the freezer until the chocolate has hardened.
You can store the almonds in an airtight container in the freezer for several months or in the fridge/ countertop for a couple of weeks (if they last that long.)
You can add different flavors to the melted chocolate, like orange, vanilla, or cayenne pepper. The options are limitless!
Chocolate Covered Almonds
Ingredients
- dry roasted organic almonds
- ½ cup dark chocolate chips (or whatever you prefer)
- 1 tbsp extra-virgin coconut oil
- flaky sea salt (optional)
Instructions
- Line a baking sheet with parchment paper.
- In a bowl add in your chocolate and coconut oil and place in the microwave or a double broiler until melted.
- Add almonds to melted chocolate and make sure they are completely covered.
- Use a fork to remove almonds one at a time and let the excess chocolate drip off. Place on baking sheet.
- Repeat until all almonds are removed from the chocolate.
- *Optional- sprinkle flaky sea salt on the almonds while still wet.
- Place in the freezer for about 20-30 minutes or until the chocolate is hard.
- *Optional- once chocolate is hard you can place the almonds in more chocolate to double coat them.
- Once the chocolate is hard, store in a glass container and enjoy for up to 1 week!
