
This is the drink you didn’t know you needed this fall!
There’s something about figs in late summer and early fall, soft, jammy, and naturally sweet, like nature’s candy dressed up in deep purple. Pair them with warm vanilla and espresso, and you get a latte that feels both cozy and refreshing. It’s indulgent without being overly sweet, grounding without being heavy, and just different enough to feel like a café treat made at home.
This caramelized fig & vanilla iced latte has quickly become one of my favorite ways to slow down mid-morning. It tastes like a coffee shop drink, but with simple ingredients, and beautiful seasonal flavor. You can batch the fig syrup ahead of time for quick weekday use, which I highly recommend.

Caramelized Fig and Vanilla Iced Latte
Ingredients
- 8-9 figs, washed and dried
- 1 cup sugar
- ¾ cup water
- 1 tsp vanilla bean paste
- espresso
- preferred milk/ creamer
- ice
Instructions
- Half and place figs in a pot with sugar, vanilla, and water.
- Bring to a boil and cook over medium heat until sugar is dissolved.
- Break up the figs with the back of a spoon and continue to cook for 5-8 minutes. Reduce heat and maintain a gentle boil.
- Remove from heat and let cool for 10 minutes.
- Strain through a mesh sieve. Gently press the mixture through using the back of a spoon.
- Add fig syrup, ~ ½ tsp- 1 tbsp to a coffee cup, and pour ice, espresso, and milk of choice on top. Stir and enjoy!
- *Store syrup in a jar in the fridge and enjoy for up to two weeks.
