Here’s a high protein take on your favorite chicken caesar classic! It’s perfect for a quick lunch and is loaded with protein and fiber!

I used an Ezekiel tortilla which has 7g of protein, bringing this wrap to about 40g of protein, depending on how many ounces of chicken you use!

High Protein Chicken Caesar Wraps

Ingredients

Dressing

  • ¾ cup raw cashews
  • ½ cup water
  • 2 garlic cloves
  • 2 tsp dijon mustard
  • juice from 1 lemon
  • salt and pepper to taste

Wraps Ingredients

  • 2 chicken breasts
  • 2 ezekiel tortillas
  • 1 can chickpeas
  • lettuce
  • parmesan cheese
  • sunflower seeds
  • 1 tbsp olive oil
  • salt and pepper to taste
  • cayenne pepper to taste

Instructions

Dressing

  • Soak cashews in warm *not hot* water for 5 minutes. Drain and rinse.
  • Add all dressing ingredients together and blend on high speed for about 30 seconds to 1 minute. Add more water if you want to thin it out, 1 tsp at a time. Set aside.

Wrap

  • Drained and rinse chickpeas and toss in a small bowl with 1 tbsp olive oil, cayenne pepper, oregano and garlic powder. Mix until fully coated.
  • Place in air fryer and cook for 20 minutes at 360°, tossing halfway through. Chickpeas should get hard and crispy.
  • While the chickpeas are cooking, add olive oil to a pan and cook chicken. Season with salt, pepper and cayenne pepper. Cook through fully.
  • Heat up tortillas and add to a plate.
  • Add Caesar dressing to your tortilla. Place cut chicken on top, followed by lettuce, chickpeas, sunflower seeds and parmesan cheese.
  • Roll up wrap, cut in half and enjoy!
