High Protein Three Bean Ground Turkey Chili

Ingredients
- 1 can black beans
- 1 can pinto beans
- 1 can red kidney beans
- 1 can corn
- 1 can fire roasted diced tomatoes
- 2 bell peppers, diced
- ¾ yellow onion, diced
- 2 garlic cloves, minced
- 1 lb ground turkey
- 2 cups bone broth
- ½ – 1 cup salsa, mild to medium
- 1 tbsp olive oil
- 2 tsp chili powder
- 1 tsp cumin
- cayenne pepper to taste
- salt and pepper to taste
- cilantro for garnish
- lime juice for garnish
- cheese for garnish
Instructions
- In a large pot on medium heat, add diced onion and olive oil. Let cook until onions become translucent.
- Once translucent, add in minced garlic, chili powder, cumin, cayenne pepper, salt and pepper. Mix until combined. Let cook until spiced become fragrant. ~ 2 minutes.
- Add ground turkey and chop into small chunks. Let cook fully.
- Slowly add in vegetable stock. With a wooden spoon, scrape all the bits off the bottom of the pot.
- Add in all beans, corn, tomatoes, bell pepper and salsa. Stir everything together and cover to let simmer for 25-30 minutes, stirring occasionally.
- Once done, remove from heat and remove lid. Let sit for 5 minutes.
- Serve with lime juice, fresh cilantro, cheese and enjoy!
