Black Bean Quinoa Burger

Ingredients
For The Patties
- 1 can black beans, rinsed and drained
- 1 cup cooked quinoa
- 1 tbsp ground cumin
- 1 tsp smoked paprika
- salt and pepper to taste
- 1 tbsp olive oil
For Serving
- 4 whole wheat burger buns
- fresh lettuce
- grilled red onions
- sliced tomato
- pickles
- cheddar cheese
- your favorite burger sauce
Instructions
- Cook 1 cup of quinoa as instructed on package and let cool.
- Drain and rinse beans. Set aside.
- In a large mixing bowl, combine 1/2 of the cooked quinoa, black beans and seasonings. Mix everything together until well-combined. Continue to add more quinoa if the mixture is too wet.
- Using a potato masher or the back of a fork, mash the black bean mixture. Aim for a slightly chunky consistency, as it will provide a better texture to your burgers.
- Once the mixture is well-mashed, shape it into burger patties of your desired size. (You should be able to make at least 4) Ensure they are compact and hold together well.
- Preheat your stovetop pan over medium heat. Lightly brush the surface with olive oil to prevent sticking.
- Cook the black bean quinoa burgers for about 4-5 minutes per side, or until they develop a crispy exterior and a warm, firm center. Make sure to flip them gently to avoid breaking.
- Optional- add cheese after flipping the patty and cover until melted.
- While the burgers are cooking, prepare your burger buns and toppings. Toast the buns for an extra crunch and layer them with fresh lettuce leaves, sliced tomatoes, pickles, and grilled red onions.
- Once the burgers are ready, assemble them with your favorite sauces and condiments. Get creative with options like tangy barbecue sauce, creamy mayo, zesty mustard, or spicy sriracha.
- Serve with a refreshing side salad or a platter of crispy oven-baked sweet potato fries and enjoy!
