This recipe has the perfect balance of sweet and salty, making it completely irresistible. Plus, it’s super customizable—so no matter what flavors you love, you can make it just the way you like!

I’m sharing my top three favorite variations: raspberry, nuts, and pretzels—each made with just five simple ingredients. But don’t be afraid to get creative and try out different mix-ins! Whether you prefer a crunch, a fruity burst, or extra chocolatey goodness, there’s a version for everyone.

Stuffed Dates

Ingredients

  • 10-12 dates, pitted
  • 1/2 cup peanut butter, or your favorite nut butter
  • 1/2 cup 75% dark chocolate, melted
  • 1 tbsp coconut oil
  • 1/2 cup raspberries
  • 1/4 cup dry roasted peanuts or almonds, chopped
  • 1/4 cup pretzels, crushed

Instructions

  • Cut open one side of the date and remove the pit and open to make a pocket.
  • Place 1-2 raspberries, peanuts and pretzels in your dates.
  • Spoon in ~1 tbsp of peanut butter in each date and gently close as much as you can.
  • Place in the freezer until peanut butter is hard.
  • While dates are in the freezer, place your chocolate and coconut oil in a small blow and microwave until chocolate is melted. ~45 seconds
  • Once peanut butter has hardened, roll or spoon chocolate all over the dates until completely covered.
  • *Optional- add crushed raspberries, peanuts and pretzels on top of the corresponding date before placing back in freezer.
  • Freeze for 20-30 minutes or until dates are hard.
  • Let dates sit out for 1-2 minutes to let thaw slightly before eating. Enjoy!
